Met my mate Ewan for brunch. He had made some food at home so he brought it in. Must say it tastes so good. Its an oat free porridge. Definitely gonna try make this 1
Ewan's non oatmeal porridge
YIELD: 2-3 Servings
PREP: 5 mins
COOK: 5-10 mins
READY IN: 15 mins
Ingredients1/3 cup crushed walnuts
1/3 cup crushed almonds
2 Tbs ground flax seed
1/2–1 tsp ground cinnamon
dash of freshly ground nutmeg
1/4 tsp ground ginger
1 Tbs almond butter or coconut pulp (optional)
1 banana, mashed
3 eggs
1/3 cup unsweetened almond milk (or coconut water)
2 tsp pumpkin seeds
1 handful of fresh/frozen berries (optional)
1/2 apple (optional)
1/2 seasonal stone fruit (optional)
Instructions
1. Combine nuts, spices and flax seed in a food processor
to pulse the mixture until it is a course grain texture. Do not
grind it all the way down into a powder.
2. Whisk eggs and almond milk/ coconut water into a thick
combination that resembles loose custard consistency
3. Blend mashed banana and almond butter together. Add
this blend to the eggs and almond milk and mix well.
4. Slowly add in the nut mixture you ground to a grain
texture
5. Heat in a medium saucepan until the mixture reaches
your desired consistency. Be sure to stir frequently.
6. Add fruit or more almond milk to taste.
Snacks - sweet potato fries, 1 of my bars I made last night.
